4 Levels of Flatbread: Amateur to Food Scientist | Epicurious

We challenged chefs of three different skill levels - amateur Emily, home cook Rinku, and executive chef Ayesha Nurdjaja of Shuka Restaurant in New York City - to toast us up their favorite flatbread recipe. Once each level of chef had finished and tasted their final product, we asked food scientist Rose to explain their choices from an expert's perspective. Which flatbread are you reaching for first?

  • Level 1 Emily is adorable and made a great thing. Level 2 was comforting and warm, and I loved her genuineness. Level 3.... I really didn't like her. Her personality was grating, her dish seemed boring,. One of the worst so-called-level-3's we've seen in a while.

Instead of just elevating American style cooking with more expensive ingredients, we're finally acknowledging other cultural cooking practices and showing how much more depth and flavor can be imparted by incorporating other spices and techniques.   • When I saw lahmacun, I lost it. I love that stuff. I don't dare leave it for under 10 minutes in the oven... always comes out crunchy. Though when I buy it in shops, you can even roll them. Any tips for that? I'm worried about meat not cooking enough in 8 minutes.
